The effects can extend beyond lost sales: kitchens prepare for expected demand, managers schedule staff, and servers may lose the chance to earn tips. Many booking platforms now allow restaurants to hold a card, request a deposit, or apply a stated late-cancellation fee.

The fairness of these policies depends heavily on design. A clearly displayed, proportionate fee may encourage people to cancel promptly and protect small businesses, especially for large groups or peak-time tables. Yet a strict charge can feel unreasonable when someone faces an emergency, a travel delay, or a booking-system error. Useful alternatives include reminder messages, waiting lists, flexible cancellation windows, and case-by-case refunds. The central question is whether a no-show fee should mainly compensate restaurants for a real loss, change customer behavior, or both—and how to do so without making reservations feel unfriendly or risky.
